These vegan, healthy, no-bake Gingerbread Energy Balls are the perfect guilt-free way to get that spicy, warming flavor of gingerbread during the holidays! The other day I got a hankering for ginger cookies. Soft, chewy ginger cookies, specifically. And I made some, and they were delicious.
